Cauliflower Crust Pizza, Hypoallergenic Recipe

I wanted a recipe that didn’t require heavy duty & potential toxic machinery. I ditched my microwave years ago and have never owned a food processor. This modified recipe gives you a tasty cauliflower crust that is simply made and can be modified to fit nearly any food restriction.Screen Shot 2015-03-30 at 8.43.36 AM

To make two grain & gluten free cauliflower pizza crusts WITHOUT a food processor or microwave:

1.) I used 1 whole head of cauliflower (~1kg) and boiled it until soft thruout,

2.) I put half the cooked cauliflower in my blender but left it kind of chunky & chopped the other half very fine and then mixed the 2 in a bowel.

3.) I mixed it well, ensuring no huge chunks, then I put it thru a mesh strainer to remove as much excess moisture as possible (really important),

4.) Then I placed the drained cauliflower mash on a paper towel while I went to prep my toppings.

5) Then I added 2 whole eggs to the cauliflower mash (next time I’ll try just 1 egg & a bit of cheese), add seasonings (ie thyme, rosemary, oregano, chili flakes, salt, etc),

6.) Then I lined 2 pizza/cookie trays with parchment, smeared some coconut oil (dust some rice flour or cornmeal, optional). Scoop out half the mixture onto each tray. Smooth out evenly, not making it too thin.

7) Bake on 450F to steam out some of the moisture, make firm, & golden on the top and bottom for about 20-25min.

8) Remove, top with sauce & toppings of your choice (I pre-sautéed my toppings, optional).

9.) Place your pizza back in the oven under low broil until cheese is melted.

This is my modified recipe that is dairy, grain, & gluten free and does not need a food processor or microwave. The crust will be softer than a conventional crust, but will hold together well. Try this recipe and let me know how it goes in the comments below!

For egg restriction, ditch the egg all together or try 1 tbspn chia seeds in 2oz hot water. Let it sit until it becomes gelatinous and use in place of egg.

Fast Food: Bake additional crusts, wrap in parchment paper and store in the freezer for up to 3 months. When you are ready to use, add your top favorite toppings and bake at 375F
